  • 1/4 teaspoon nutmeg
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine graham cracker crumbs and melted butter in a bowl, then press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth, then mix in the sugar and vanilla extract.
  4. Add apple cider, eggs, cinnamon, nutmeg, and cornstarch, mixing until well combined.
  5. Pour the filling over the crust and smooth the top.
  6. Bake for 50-60 minutes until set and slightly jiggly in the center.
  7. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  8. Chill in the refrigerator for at least 4 hours before serving.
