  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 2 cups peeled, diced apples
  • 1 cup brown sugar for crumb topping
  • 1/2 cup all-purpose flour for crumb topping
  • 1/4 cup butter for crumb topping
  • 1 teaspoon ground cinnamon for crumb topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix together the melted butter, eggs, and milk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the diced apples.
  6. In a separate bowl, combine the brown sugar, flour, butter, and cinnamon for the crumb topping until crumbly.
  7. Fill the muffin cups about 2/3 full with the muffin batter and sprinkle the crumb topping on top.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Allow to cool before serving.

Notes

  • For a richer flavor, you can add nuts or raisins to the recipe.
  • Ensure that the apples are finely diced for even distribution in the batter.
