BBQ Chicken & Roasted Sweet Potato Bowls

  • 2 boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread on a baking sheet and roast for 25-30 minutes until tender.
  4. While the sweet potatoes are roasting, season the chicken breasts with salt and pepper.
  5. Heat a grill pan over medium-high heat and cook the chicken for 6-7 minutes on each side, until cooked through.
  6. Brush the BBQ sauce on the chicken in the last few minutes of cooking.
  7. Once cooked, let the chicken rest before slicing.
  8. Serve the sliced chicken over the roasted sweet potatoes and garnish with fresh parsley.
