- 2 medium beets
- 1 cup feta cheese, crumbled
- 1 medium cucumber, diced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt to taste
- Pepper to taste
- Preheat the oven to 400°F (200°C).
- Wrap the beets in aluminum foil and roast them for about 45 minutes, until tender.
- Once cool, peel and chop the beets into bite-sized pieces.
