Ingredients

  • 2 medium beets
  • 1 cup feta cheese, crumbled
  • 1 medium cucumber, diced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the beets in aluminum foil and roast them for about 45 minutes, until tender.
  3. Once cool, peel and chop the beets into bite-sized pieces.
  4. In a large bowl, combine the chopped beets, feta, cucumber, and dill.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Serve chilled or at room temperature.
