  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh thyme
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Season the pork tenderloin with salt and pepper.
  4. Sear the pork in the skillet until browned on all sides, about 4-5 minutes.
  5. Transfer the skillet to the preheated oven and roast until the pork reaches an internal temperature of 145°F (63°C), about 20-25 minutes.
  6. Remove the pork from the oven and let it rest for 5 minutes.
  7. In the same skillet, add heavy cream, Dijon mustard, thyme, and garlic. Stir to combine and reduce the sauce for 3-5 minutes.
