- 1 cup rolled oats
- 1 cup canned pumpkin puree
- 1/2 cup honey or maple syrup
- 1/4 cup almond butter
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup chopped nuts (optional)
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large bowl, combine rolled oats, pumpkin puree, honey or maple syrup, almond butter, baking powder, cinnamon, nutmeg, and salt. Stir until well mixed.
- If using, fold in the chopped nuts.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 25–30 minutes, or until the bars are set and slightly golden on top.
- Let cool before cutting into bars.
Notes
