Ingredients

  • 2 large eggs
  • 2 slices whole grain bread
  • 2 slices turkey bacon
  • 1 tablespoon butter
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon chopped chives

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Set aside.
  2. In the same skillet, add butter and crack the eggs directly into the pan.
  3. Cook the eggs for about 7 minutes, or until the whites are set but yolks remain runny.
  4. Meanwhile, toast the bread slices.
  5. Once the eggs are done, smash them gently with a fork on top of the toasted bread.
  6. Top with cooked turkey bacon, salt, pepper, and chopped chives.
