Cajun White Chicken Chili

A comforting and hearty twist on classic chili with a Cajun flair.

  • 1 pound chicken breast, cooked and shredded
  • 4 slices turkey bacon, chopped
  • 1 can white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup cilantro, chopped, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add diced onion and garlic and sauté until translucent.
  3. Stir in the shredded chicken, white beans, corn, chicken broth, Cajun seasoning, and cumin.
  4. Bring to a simmer, then reduce heat and let it cook for about 20 minutes.
  5. Season with salt and pepper to taste, and serve hot, garnished with fresh cilantro.

Notes

  • This chili can be topped with cheese or avocado for added flavor.
  • Adjust the heat by adding more or less Cajun seasoning.
