Caramel Chocolate Cupcakes

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1 cup caramel sauce, for filling and topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter until smooth, then add the eggs and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, until just combined.
  5. Fill the cupcake liners about 2/3 full with batter and bake for 20-25 minutes.
  6. Once baked, let the cupcakes cool before removing them from the tin.
  7. Once cool, cut a small hole in the center of each cupcake and fill with caramel sauce.
  8. Top with more caramel sauce before serving.

Notes

  • Make sure to use room temperature ingredients for the best results.
  • Top with sea salt for an extra flavor kick!
