  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the oil, eggs, vanilla, grated carrots, and crushed pineapple.
  4. Combine the wet ingredients with the dry ingredients, mixing until just combined.
  5. If using, fold in the chopped walnuts.
  6. Pour the batter into a greased and floured 9×13 inch pan.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
