  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add turkey bacon and cook until crispy. Remove and chop into pieces.
  3. Add onion, carrots, and celery; cook until softened.
  4. Stir in garlic and cook for 1 minute.
  5. Pour in chicken broth and bring to a boil.
  6. Add chicken, peas, cream, thyme, salt, pepper, and flour; stir to combine.
  7. Let simmer for 10-15 minutes, until thickened.
  8. Serve hot, garnished with chopped turkey bacon.

Notes

  • For a thicker soup, add more flour.
  • Feel free to use any leftover cooked chicken.
