Chile Relleno Soup is a warm and comforting dish that brings the flavors of traditional Chile Rellenos into a delicious soup form. Perfect for a cozy dinner, it features roasted peppers, cheese, and spices.

  • 2 large poblano peppers
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 cup corn kernels
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Roast the poblano peppers until the skin is charred. Remove the skin and seeds, then chop.
  2. In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, sauté until translucent.
  3. Add the roasted peppers, vegetable broth, diced tomatoes, cumin, chili powder, and smoked paprika. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes.
  5. Stir in the corn, heavy cream, and shredded cheese. Cook until the cheese has melted.
  6. Garnish with fresh cilantro before serving.

Notes

  • For a spicier soup, add chopped jalapeños.
  • Can be made ahead and stored in the refrigerator for up to 3 days.
