  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1 cup crushed peppermint bark

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients.
  7. Fold in the crushed peppermint bark.
  8. Divide the batter evenly among the cupcake liners.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow cupcakes to cool completely before frosting.

Notes

  • For a festive touch, sprinkle additional crushed peppermint on top of the frosting.
  • Cupcakes can be made a day in advance and stored in an airtight container.
