  • 1 cup pumpkin puree
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla. Mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients until just combined. Fold in the chocolate chips.
  5. Divide the batter among the cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving.

Notes

  • For extra chocolate flavor, add chocolate frosting on top.
  • These cupcakes freeze well in an airtight container.
