Chocolate Raspberry Mousse Cake

A decadent and rich dessert that combines the flavors of chocolate and raspberry in a velvety mousse cake.

  • 1 1/2 cups chocolate crumbs
  • 1/3 cup unsalted butter, melted
  • 1 cup fresh raspberries
  • 3 cups heavy cream
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 ounces dark chocolate, chopped
  • 2 teaspoons gelatin powder
  • 3 tablespoons cold water
  • 1/4 cup raspberry puree

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a springform pan.
  2. In a bowl, combine the chocolate crumbs and melted butter, then press into the bottom of the pan.
  3. In a saucepan, heat half the cream and add the chopped chocolate until melted. Let it cool.
  4. Dissolve the gelatin in cold water, then add it to the chocolate mixture.
  5. In a separate bowl, whip the remaining cream with sugar and vanilla until soft peaks form.
  6. Fold the chocolate mixture into the whipped cream carefully.
  7. Add the raspberry puree and gently mix.
  8. Pour the mousse over the crust and chill for at least 4 hours until set.

Notes

  • For a richer flavor, use high-quality dark chocolate.
  • Allow the cake to sit in the fridge overnight for best results.
