- 1 1/2 cups chocolate crumbs
- 1/3 cup unsalted butter, melted
- 1 cup fresh raspberries
- 3 cups heavy cream
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 8 ounces dark chocolate, chopped
- 2 teaspoons gelatin powder
- 3 tablespoons cold water
- 1/4 cup raspberry puree
- Preheat the oven to 350°F (175°C) and prepare a springform pan.
- In a bowl, combine the chocolate crumbs and melted butter, then press into the bottom of the pan.
- In a saucepan, heat half the cream and add the chopped chocolate until melted. Let it cool.
- Dissolve the gelatin in cold water, then add it to the chocolate mixture.
- In a separate bowl, whip the remaining cream with sugar and vanilla until soft peaks form.
- Fold the chocolate mixture into the whipped cream carefully.
- Add the raspberry puree and gently mix.
- Pour the mousse over the crust and chill for at least 4 hours until set.
Notes
- For a richer flavor, use high-quality dark chocolate.
- Allow the cake to sit in the fridge overnight for best results.
