  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Andes mint baking chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the flour, cocoa powder, baking soda, and salt; gradually add to the creamed mixture.
  5. Fold in the Andes mint baking chips.
  6. Drop by rounded tablespoon onto ungreased baking sheets.
  7. Bake for 10-12 minutes, or until the edges are firm.
  8. Allow cookies to cool on the sheet for a few minutes before transferring them to racks to cool completely.

  • These cookies freeze well for up to 3 months.
