Cinnamon Roll Cookies

Deliciously soft and chewy cinnamon roll cookies that combine the classic flavors of cinnamon rolls in a fun, cookie format.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground cinnamon
  • 1/4 cup powdered sugar (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs and vanilla extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. In a small bowl, mix together the cinnamon and 2 tablespoons of sugar to create the cinnamon filling.
  7. Roll out the cookie dough and sprinkle the cinnamon mixture on top. Roll it into a log and slice into rounds.
  8. Place rounds on the prepared baking sheet and bake for 10-12 minutes or until lightly golden.
  9. Let cool and drizzle with icing made from powdered sugar and water.

Notes

  • For a richer flavor, consider using brown butter.
  • Chill the dough for 30 minutes before baking for chewier cookies.
