- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup butter, softened
- 1/2 cup milk
- 2 large eggs
- 1 tbsp baking powder
- 2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the milk and vanilla extract.
- In another bowl, combine the flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- For the filling, mix brown sugar and cinnamon together in a small bowl.
- Fill cupcake liners halfway with batter, sprinkle with filling, then add more batter on top.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
