Cowboy Butter Chicken Linguine

  • 2 pounds chicken breast, diced
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Cook linguine according to package instructions. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add diced chicken and cook until no longer pink.
  3. Add minced garlic, paprika, and cayenne pepper to the skillet, cooking for 1-2 minutes.
  4. Pour in chicken broth and bring to a simmer, then add heavy cream and Parmesan cheese.
  5. Stir until well combined and sauce is thickened. Add cooked linguine, toss to coat.
  6. Garnish with parsley before serving.
