Crack Chicken Stuffed Baked Potatoes

  • 4 large russet potatoes
  • 2 cups cooked shredded chicken
  • 1 packet ranch seasoning mix
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and poke holes in them with a fork. Rub with olive oil and sprinkle with salt.
  3. Bake the potatoes for about 45-60 minutes, or until tender.
  4. In a mixing bowl, combine the shredded chicken, ranch seasoning, cream cheese, cheddar cheese, bacon, green onions, garlic powder, salt, and pepper.
  5. Once the potatoes are baked, carefully cut them in half and scoop out a bit of the inside.
  6. Mix the scooped potato with the chicken mixture, then refill the potato skins with this mixture.
  7. Top with additional cheese and bake for another 10-15 minutes until heated through.
  8. Serve warm and enjoy!

  • Great topped with extra bacon or sliced jalapeños for some spice!
