- 4 large russet potatoes
- 2 cups cooked shredded chicken
- 1 packet ranch seasoning mix
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and poke holes in them with a fork. Rub with olive oil and sprinkle with salt.
- Bake the potatoes for about 45-60 minutes, or until tender.
- In a mixing bowl, combine the shredded chicken, ranch seasoning, cream cheese, cheddar cheese, bacon, green onions, garlic powder, salt, and pepper.
- Once the potatoes are baked, carefully cut them in half and scoop out a bit of the inside.
- Mix the scooped potato with the chicken mixture, then refill the potato skins with this mixture.
- Top with additional cheese and bake for another 10-15 minutes until heated through.
- Serve warm and enjoy!
