  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine water and butter, and bring to a boil.
  3. Add flour and salt, stirring until a ball forms.
  4. Remove from heat and let cool for 5 minutes.
  5. Beat in eggs one at a time until smooth.
  6. Spoon or pipe the dough onto a baking sheet.
  7. Bake for 25 minutes until golden and puffed.
  8. For the pastry cream, heat milk, sugar, cornstarch, and salt until thickened.
  9. Whisk egg yolks, then temper with hot mixture, return to heat.
  10. Stir in lemon juice, zest, and vanilla, then cool.
  11. Once puffs are cooled, fill with lemon pastry cream.

Notes

  • For best results, use fresh lemons for the pastry cream.
  • Chill the pastry cream before filling the puffs for a smoother texture.
