Crockpot Rice Pudding

  • 1 cup uncooked long-grain rice
  • 4 cups milk
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup raisins (optional)

Instructions

  1. Rinse the rice under cold water and drain.
  2. In the crockpot, combine the rice, milk, sugar, vanilla, cinnamon, and salt.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 4 hours or until the rice is tender.
  5. If adding raisins, stir them in during the last 30 minutes of cooking.
  6. Once cooked, give it a good stir and serve warm.

Notes

  • You can top with additional cinnamon or a sprinkle of nutmeg if desired.
  • For creamier pudding, use whole milk or add a bit of heavy cream.
