Ingredients

  • 1 pound Italian sausage
  • 2 cups white beans, canned and drained
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup chicken broth
  • 2 cups gnocchi
  • 2 tablespoons butter

Instructions

  1. In a crockpot, add the sausage, white beans, diced tomatoes, onion, garlic, thyme, oregano, and chicken broth.
  2. Cook on low for 6 hours or high for 4 hours.
  3. About 30 minutes before serving, add the gnocchi.
  4. Melt the butter in a pan and toss the cooked gnocchi in the butter.
  5. Serve the ragu topped with buttered gnocchi.

Notes

  • Feel free to add spinach or kale for added nutrition.
  • Serve with crusty bread for dipping.
