Cucumber Pasta Salad

A light and refreshing salad perfect for summer gatherings.

Ingredients

  • 8 ounces pasta of your choice
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh dill, chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, cucumber, cherry tomatoes, red onion, dill, and feta cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and black pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad can be made a day in advance for better flavor.
  • Feel free to add any other vegetables you like!
