Dark Chocolate Raspberry Cheesecake

  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 8 ounces dark chocolate, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine the crushed graham crackers and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla extract, mixing until combined.
  4. Add the eggs one at a time, mixing well after each addition. Then, fold in the melted dark chocolate.
  5. Gently fold in the fresh raspberries.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 45-50 minutes or until the center is set. Let it cool before refrigerating for at least 4 hours.
