  • 4 large bell peppers
  • 1 pound ground turkey
  • 4 slices turkey bacon, chopped
  • 1 cup cooked quinoa
  • 1 cup shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the turkey bacon until crispy, then add the ground turkey and cook until browned.
  4. Mix in cooked quinoa, garlic powder, onion powder, Italian seasoning, salt and pepper.
  5. Stuff the bell peppers with the turkey mixture and top with shredded cheese.
  6. Place the stuffed peppers upright in a baking dish. Bake for 25-30 minutes or until the peppers are tender.
