  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, brown sugar, and coconut oil until well combined.
  3. Add in the eggs and mix until smooth.
  4. In another bowl, mix the dry ingredients: whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently.
  6. Fold in the chopped walnuts.
  7. Pour the batter into muffin tins lined with paper liners.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
