  • 1/4 cup cream cheese
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix the pumpkin puree, eggs, cream cheese, and vanilla extract until smooth.
  3. In another bowl, combine the almond flour, coconut flour, erythritol, baking powder, baking soda, salt, and pumpkin pie spice.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  5. Divide the batter into the prepared muffin tin.
  6. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
