  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup plain yogurt
  • 2 large eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup walnuts, chopped (optional)
  • 1/4 cup oats (for topping)
  • 1/4 cup brown sugar (for topping)
  • 1 tsp ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, vegetable oil, brown sugar, granulated sugar, yogurt, and eggs until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the walnuts if using.
  5. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. In a small bowl, combine oats, brown sugar, and ground cinnamon for the topping, then sprinkle it over the batter in the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes in the pan before transferring to a wire rack to cool completely.
