Easy 20 Minute Lemon Broccoli Pasta Dinner

A quick and delicious meal that combines pasta with fresh lemon and broccoli, perfect for busy weeknights!

Ingredients

  • 8 ounces pasta of your choice
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water.
  2. In the last 3 minutes of cooking, add the broccoli florets to the pot.
  3. Drain the pasta and broccoli, reserving a cup of pasta water.
  4. In the same pot, heat the olive oil over medium heat and sauté the garlic until fragrant.
  5. Add the drained pasta and broccoli, along with lemon zest, Parmesan cheese, and lemon juice. Toss well.
  6. If the pasta is too dry, add a bit of the reserved pasta water to reach the desired consistency.
  7. Season with salt and pepper, then serve immediately.

Notes

  • Feel free to add grilled chicken or shrimp for extra protein.
  • For a vegan option, omit the Parmesan or use a plant-based substitute.
