  • 1/2 teaspoon salt
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, brown the butter over medium heat until it smells nutty.
  3. In a bowl, mix the brown butter, pumpkin puree, brown sugar, and granulated sugar until combined.
  4. Add the egg and vanilla extract, mixing until smooth.
  5. In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the maple syrup until fully incorporated.
  8. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes, or until edges are slightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For chewier cookies, underbake slightly.
  • Feel free to add chocolate chips or nuts if desired.
