  • 1 can coconut milk
  • 2 cups jasmine rice
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon curry powder
  • 1 teaspoon garlic powder
  • 1 onion, chopped
  • 1/2 cup peas

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season the chicken thighs with salt, black pepper, curry powder, and garlic powder.
  3. Add the seasoned chicken to the pan and cook until browned on both sides.
  4. Remove chicken and set aside.
  5. Add chopped onion to the pan and sauté until translucent.
  6. Stir in the rice, coconut milk, and chicken broth.
  7. Place the chicken back into the pan and bring to a boil.
  8. Reduce heat, cover, and simmer for about 20 minutes.
  9. Add peas in the last 5 minutes of cooking.
  10. Fluff rice and serve hot.
