2 boneless, skinless chicken breasts
8 ounces pasta of choice
1 cup mozzarella cheese, shredded
2 tablespoons olive oil
2 cloves garlic, minced
1 can (15 ounces) crushed tomatoes
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh basil for garnish
Instructions
Cook the pasta according to package instructions; drain and set aside.
In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes on each side or until cooked through.
Remove chicken from skillet, let it rest for a few minutes, then slice.
Add minced garlic to the skillet and sauté for 1 minute. Stir in crushed tomatoes and Italian seasoning, simmer for 5 minutes.
Add cooked pasta and sliced chicken to the skillet, mixing well. Sprinkle mozzarella cheese on top and cover until cheese is melted.
Serve hot, garnished with fresh basil.
Notes
For a lighter version, use whole wheat pasta.
Feel free to add vegetables like spinach or bell peppers.
