  • 2 boneless, skinless chicken breasts
  • 8 ounces pasta of choice
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 can (15 ounces) crushed tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes on each side or until cooked through.
  3. Remove chicken from skillet, let it rest for a few minutes, then slice.
  4. Add minced garlic to the skillet and sauté for 1 minute. Stir in crushed tomatoes and Italian seasoning, simmer for 5 minutes.
  5. Add cooked pasta and sliced chicken to the skillet, mixing well. Sprinkle mozzarella cheese on top and cover until cheese is melted.
  6. Serve hot, garnished with fresh basil.

Notes

  • For a lighter version, use whole wheat pasta.
  • Feel free to add vegetables like spinach or bell peppers.
