  • 2 cups yellow squash, sliced
  • 1 cup zucchini, sliced
  • 1 cup onion, chopped
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine yellow squash, zucchini, onion, turkey bacon, cheddar cheese, breadcrumbs, salt, pepper, garlic powder, and paprika.
  3. Transfer the mixture to a greased baking dish.
  4. Bake for 25-30 minutes or until the top is golden and bubbly.
  5. Let it cool for a few minutes before serving.

Notes

  • You can substitute turkey bacon with regular bacon for a richer flavor.
  • For a vegetarian option, omit the bacon and add more vegetables.
