  • 1 onion chopped
  • 2 cups cooked shredded chicken
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 slices turkey bacon, cooked and crumbled
  • 2 tablespoons flour
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; cook until soft.
  2. Stir in the flour, then gradually add chicken broth while stirring to avoid lumps.
  3. Add shredded chicken, peas, thyme, and seasonings. Simmer for about 10 minutes.
  4. Stir in the heavy cream and crumbled turkey bacon; cook until heated through.
  5. Serve warm, garnished with additional thyme if desired.

Notes

  • For a thicker soup, add more flour.
  • Can use leftover Rotisserie chicken for convenience.
