  • 1 cup diced chicken ham
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Cook until softened.
  3. Add garlic and thyme, cooking for an additional minute.
  4. Stir in the split peas and chicken broth. Bring to a boil.
  5. Reduce heat and simmer for about 45 minutes until peas are tender.
  6. Add the diced chicken ham and cooked turkey bacon, stirring to combine.
  7. Season with salt and pepper to taste. Serve hot.

Notes

  • This soup can be made ahead and freezes well.
  • For a thicker consistency, blend half of the soup and mix it back in.
