  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Add the onion, carrots, and celery, and sauté until softened, about 5 minutes.
  3. Stir in the garlic and cook for 1 more minute.
  4. Add the chicken broth, shredded chicken, peas, thyme, salt, and pepper. Bring to a simmer.
  5. In a small bowl, whisk the flour with the heavy cream until smooth. Stir this mixture into the soup.
  6. Simmer for additional 5-10 minutes, until thickened. Serve warm.

Notes

  • This soup is best served fresh but can be stored in the fridge for up to 3 days.
  • For a thicker soup, add more flour to the cream mixture.
