  • 1 cup onion, diced
  • 2 cups carrots, sliced
  • 2 cups celery, diced
  • 4 cups chicken broth
  • 2 cups shredded rotisserie chicken
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the turkey bacon in a large pot until crispy, then remove and crumble.
  2. In the same pot, sauté the onions, carrots, and celery until softened.
  3. Add the chicken broth, shredded chicken, frozen peas, thyme, salt, and pepper to the pot.
  4. In a small bowl, whisk together the heavy cream and flour until smooth, then stir into the soup.
  5. Bring to a simmer and cook until thickened. Top with crumbled turkey bacon before serving.

Notes

  • This soup can be refrigerated for up to 4 days.
  • Freezing is not recommended as cream can separate when thawed.
