- 8 ounces turkey bacon
- 1 pound Italian sausage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 6 cups chicken broth
- 2 teaspoons Italian seasoning
- 12 ounces lasagna noodles, broken
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- In a skillet, cook the turkey bacon and sausage until browned.
- Add the onion and garlic and sauté until the onion is translucent.
- Transfer the mixture to the crockpot. Add crushed tomatoes, chicken broth, and Italian seasoning.
- Cook on low for 6 hours or high for 3 hours.
- 30 minutes before serving, stir in the broken lasagna noodles.
- In the last 10 minutes, add ricotta, mozzarella, Parmesan, and spinach.
- Serve hot and enjoy your cozy soup!
