Ingredients

  • 4 cups chicken broth
  • 1 cup cooked rice
  • 3 large eggs
  • 1/4 cup lemon juice
  • 4 slices turkey bacon, chopped
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the chicken broth to a simmer.
  2. Add the cooked rice and chopped turkey bacon, cooking for about 5 minutes.
  3. In a bowl, whisk together the eggs and lemon juice.
  4. Slowly add some of the hot broth to the egg mixture to temper the eggs.
  5. Stir the egg mixture back into the pot, stirring constantly until thickened.
  6. Remove from heat, stir in the chopped parsley, and season with salt and pepper.

Notes

  • For a richer flavor, use homemade chicken broth.
  • Be careful not to boil after adding the eggs to prevent curdling.
