  • 2 cups diced potatoes
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. Add onions, carrots, and potatoes to the pot. Sauté until soft, about 5-7 minutes.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until the vegetables are tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes.
  6. Serve hot, garnished with crumbled turkey bacon.

Notes

  • This soup can be made in advance and refrigerated for up to 3 days.
  • For a vegan version, omit the turkey bacon and use coconut cream instead of heavy cream.
