Ingredients

  • 1 pound turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 large potatoes, diced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same skillet, sauté onion and garlic until fragrant.
  3. Add the chicken broth, potatoes, and red pepper flakes to the crockpot.
  4. Stir in the sautéed onion and garlic, and crumbled turkey bacon.
  5. Cook on low for 6 hours or high for 3 hours.
  6. In the last 30 minutes, stir in the kale and heavy cream.
  7. Season with salt and pepper before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
