Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 2 cups chicken or vegetable broth
  • 1 cup milk
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Add the broccoli florets and broth. Bring to a boil, then reduce heat and simmer for about 10 minutes or until broccoli is tender.
  3. Use an immersion blender to purée the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender.
  4. Stir in milk and heat through. Add the shredded cheddar cheese, salt, black pepper, and paprika. Mix until cheese is melted and well incorporated.
  5. Serve hot, and enjoy!

Notes

  • For a creamier soup, you can add a splash of heavy cream.
  • Leftover soup can be reheated on the stove or in the microwave.
