- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 2 cups chicken or vegetable broth
- 1 cup milk
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the broccoli florets and broth. Bring to a boil, then reduce heat and simmer for about 10 minutes or until broccoli is tender.
- Use an immersion blender to purée the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender.
- Stir in milk and heat through. Add the shredded cheddar cheese, salt, black pepper, and paprika. Mix until cheese is melted and well incorporated.
- Serve hot, and enjoy!
Notes
- For a creamier soup, you can add a splash of heavy cream.
- Leftover soup can be reheated on the stove or in the microwave.
