  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Salt and pepper to taste
  • 1/4 cup chopped cilantro (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add shredded chicken, green enchilada sauce, black beans, corn, chicken broth, cumin, and chili powder. Stir to combine.
