  • 1 package gnocchi (about 16 ounces)
  • 1 cup spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add Italian sausage and cook until browned.
  3. Add diced onion and garlic, sauté until softened.
  4. Pour in the chicken broth and bring to a simmer.
  5. Stir in the heavy cream and gnocchi, cooking until gnocchi is tender.
  6. Add spinach and Italian seasoning, cooking until spinach is wilted.
  7. Season with salt and pepper to taste before serving.

Notes

  • For an extra creamy soup, add more heavy cream.
  • Feel free to substitute the sausage with a different protein such as chicken or mushrooms.
