  • 8 ounces turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 16 ounces mushrooms, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onion and garlic to the pot and sauté until softened.
  3. Stir in the mushrooms and cook until they release their moisture.
  4. Pour in the chicken broth and bring to a simmer.
  5. Blend the soup until smooth, then return to low heat.
  6. Stir in the heavy cream and thyme, and season with salt and pepper.
  7. Crumbled crispy bacon on top before serving.

Notes

  • This soup can be made ahead of time and reheated.
  • For a vegetarian version, substitute bacon with smoked paprika for flavor.
