1 medium onion, diced
2 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
4 cups vegetable broth
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 package (16 ounces) gnocchi
1 cup heavy cream
1/2 cup grated Parmesan cheese
Fresh basil for garnish
Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until softened, about 5 minutes.
Stir in minced garlic and cook for another minute.
Add crushed tomatoes, vegetable broth, dried basil, salt, and pepper. Bring to a simmer.
Stir in the gnocchi and cook according to package instructions, usually about 2-3 minutes.
Reduce heat and slowly stir in the heavy cream and Parmesan cheese until melted and combined.
