  • 2 pounds beef short ribs
  • 2 tablespoons olive oil
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup red wine
  • 1 teaspoon thyme
  • 1 Bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown the short ribs on all sides.
  2. Remove the short ribs and add the onions, cooking until they are caramelized.
  3. Add garlic and cook for an additional minute.
  4. Return the short ribs to the pot and add beef broth, red wine, thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and simmer for 2-3 hours until ribs are tender.
  6. Remove short ribs, shred the meat, and return to the soup before serving.

Notes

  • For added flavor, top with melted cheese and toasted bread before serving.
