- 2 pounds beef short ribs
- 2 tablespoons olive oil
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 cup red wine
- 1 teaspoon thyme
- 1 Bay leaf
- Salt to taste
- Pepper to taste
- In a large pot, heat olive oil over medium-high heat. Brown the short ribs on all sides.
- Remove the short ribs and add the onions, cooking until they are caramelized.
- Add garlic and cook for an additional minute.
- Return the short ribs to the pot and add beef broth, red wine, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer for 2-3 hours until ribs are tender.
- Remove short ribs, shred the meat, and return to the soup before serving.
