Ingredients

  • 1 pound ground turkey or beef
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 avocado, diced
  • 1 lime, juiced

Instructions

  1. In a large pot over medium heat, brown the ground turkey or beef until fully cooked.
  2. Add the black beans, corn, diced tomatoes, taco seasoning, and chicken broth to the pot. Stir well.
  3. Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld.
  4. Stir in the heavy cream and cheese until melted and creamy.
  5. Remove from heat, and stir in the diced avocado and lime juice.
  6. Serve hot and enjoy!

Notes

  • For extra flavor, top with cilantro or jalapeños.
