  • 4 slices turkey bacon, chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot, sautéing until soft.
  3. Add the butternut squash and vegetable broth, bringing to a boil. Reduce heat and simmer until the squash is tender.
  4. Pureé the soup until smooth, then stir in the heavy cream, salt, pepper, and nutmeg.
  5. Serve warm, garnished with crispy turkey bacon.

Notes

  • For a vegan option, replace heavy cream with coconut milk and omit turkey bacon.
  • This soup can be made ahead of time and reheated.
